It's Lunch Time--What's For Lunch??

As a stay-at-home-in-the-summer-mom, One of the biggest adjustments for me is having to plan for two meals at home each day.  Breakfast is pretty simple around here--granola bars, waffles, toast.  I plan for suppers year-round, so that's no big deal.  But lunch, oh, LUNCH!  Ugh!  That dreaded question of "What's for Lunch?"  I don't want to use the same type of meat as of what we had for supper the night before, or the evening meal to come.  We're sick and tired of turkey sandwiches.  I don't want to make Mac-n-Cheese everyday.  It's too expensive to eat out all of the time.
Once "What's for Lunch?" Is asked, I feel like breaking into song like the Bubble Guppies:


Now, I doubt my kids would eat TubaFish sandwiches, but I want something a little different and creative.  So today, we tried a new recipe, and it was delicious.  Something my sister would LOVE!  Mini Corn Dog Muffins.  I found the recipe on Pinterest.  However, I modified it a little and used Jiffy Corn Muffin Mix instead of making the recipe. 
 I made 2-dozen mini muffins and they disappeared like hotcakes--this was all that was left before Brandon even got to the table.  YIKES!!
 Good thing we had some other leftovers around for him :)

With the extra batter, we made two mini loaves to have with supper tonight.

  2. I've made those for the boys, too, and they LOVE them! I cut the hotdogs into little pieces though since they're still little. Thought you might be interested int his recipe for pizza puffs (maybe you've already seen it on Pinterest).   3. I DETEST lunch time and having to do two meals a day for planning with the kids! I totally feel your pain and am pretty sure we'll need to try out this recipe. I also hate using my oven in the summer when it gets really hot, which can make lunchtime and even more difficult task. I'm on the lookout for more ideas so we don't get bored with the same thing over and over again.
